does anyone not use sugar at all in their fish or am I risking the taste by omitting it?

I think it does need a bit of sugar if you are cooking it. Baked salmon does not need sugar.

I never put sugar in fish.
But I do replace sugar with silan in many foods and it works well.

You can poach it in water, white wine, fresh dill, salt, black pepper and aromatics. Cook up and taste the broth before you put in the fish, and make sure you like it.

is silan not a piece of sugar like honey or fruit juice?

basically you are left with the sugar of the fruit?

I don't add sugar when I cook my gefilte fish.
just sea salt and pepper

I make my salmon by cooking the sauce with salt and a bit of paprika, no sugar at all! I put a few onions, garlic cloves, piece of green pepper, and some peppercorns with fish skin in a net bag. I also put a whole peeled carrot in the sauce. After the vegetables soften and the sauce gets a bit concentrated, I add the salmon and cook for a half hour.

never heard of fish skin in the sauce? my salmon is steak so it comes with the skin...
you can buy skin separate?

I put in black pepper - how does it differ to peppercorns?

You can use black pepper.
Salmon skin doesn't gel well so people like to use pike skin. Not sure where you live but in my area you can ask for skin. It's usually $1.75 apiece. You can also buy fish sauce powder at the grocery but I've never tried it.

Yes. If you're avoiding sugar you don't want to use silan. Silan, honey and maple syrup have some tiny, almost negligible health benefits that sugar doesn't have but silan, which is a fruit sugar, will hit your metabolism just about the same as sugar does.
I don't have a problem cooking fish with no sugar, it's the salt I have to be generous with for my family's taste. You can try with a slice or two and see if your family will like it. I've tried white wine and it didn't go over well. Tomato sauce and vegetables give it a completely different flavor but that's popular here. Your other choice is baking or broiling with salt, a good mix of spices and a drizzle of olive oil.

I have never added sugar when poaching salmon. I had a recipe for pickled salmon that called for so much sugar it should have been called candied salmon. I cut way back on the sugar the first time I made it, and the next time I used even less. If G-d had wanted fish, meat and poultry to be sweet, He would have made it so.
