To answer your initial question- check his resume and try and find people you know in his shul (not those he tells you about,) work, etc. Call his references too because sometimes they really do end up telling you negative information if you ask the right questions.

I would worry about him not going to therapy but I wouldnt make his past a reason not to get married now. Instead I looked to hear what level of responsibility the man was willing to take. No matter how bad his ex was according to him I want to hear what he did to process it,what he worked on to change afterwards, etc.
Also, way more important- is he willing to go to therapy with you now (as soon as things get serious but before marriage.) You will need that once marriage begins to help you get a great start and I wouldn't leave that as a theoretical if I know its someone who never used therapy in the past.
