Zesty Greek Couscous
• 1 (10 oz.) Near East couscous
• 1/4 tsp black pepper
• 2 Tbsp lemon juice
• 3 Tbsp olive oil
• 2 large tomatoes, chopped
• 1 medium zucchini, halved and thinly sliced
• 1/2 cup fresh basil, cut into strips OR dried basil to taste
• 1/3 cup scallions, sliced
• salt to taste
• 3/4 cup feta cheese, crumbled

Prepare couscous according to package directions (omit any seasonings suggested).
In large bowl, combine prepared couscous, lemon juice and olive oil.
Add tomatoes, zucchini, basil and scallions. Season with salt to taste. Chill 4 hours or overnight.
Stir in cheese just before serving.

Maybe a parve pesto pasta
You say you don’t want to do soup, but if ppl serve themselves in hot cups it could work

Your menu sounds good to me. If you want to add something maybe crustless quiche and lentil or chickpea salad
