Any exciting salad ideas that I can add a protein to besides for plain old lettuce with some cut up vegetables?

At the moment, I am sitting at my desk eating salad with:
Lettuce
coleslaw mix (just the cabbage and carrots, no mayo or anything else)
salmon (https://betweencarpools.com/move-over-teriyaki-maple-salmon-is-the-new-version-the-crowd-will-love/)
slivered almonds
for the dressing:
a few shakes of rice vinegar
a few shakes of toasted sesame oil
a few shakes soy sauce
Ramen noodles for crunch
I keep the dressing ingredients in my work fridge and I make this very frequently for lunch. On shabbos I have it with grilled chicken.

Lettuce as base
Other veggies. - diff every day. Many times left over from supper:
Kirby
Tomato
Pepper
Red onion
Avocado
Baby corn
Cooked sweet potato
Cooked beets
Cooked butternut squash
Spiralized carrots
Can corn
Roasted vegetables
Green beans
Sugar snap peas
Grilled eggplant
Shredded purple cabbage
Roasted eggplant
Proteins - at least 1 or more many times left overs from fridge:
Salmon
Grilled chicken
Shredded chicken
Chickpeas (canned or roasted)
Black beans
Cannolini beans
Can tuna
Quinoa
Feta
Turkey
Farro (really a grain)
If you want a crunch topping
Ramen noodles
Pretzel crackers
Nish nosh crackers
Roasted chickpeas

My daughter has been enjoying these.
Sushi Salad: sushi rice, topped with cubes of mango, avocado, scallions, kani. Little containers of sweet sauce and spicy mayo added in for drizzling before eating. (I make her the seasoned rice at tbe beginning of the week and keep sweet sauce and spicy mayo in the fridge.)
Greek Salad: romaine, red onion, kirbies, tomato, Kalamata olives. Garnished with feta cheese. Little container of Greek dressing and packet of melba toast.
Mac n Cheese Salad: macaroni, cubes of cheddar cheese, diced pickles, thawed peas & carrot mix. Toss with a salty garlicy mayo dressing. (I make her the pasta at the beginning of the week.)
Salmon over salad: romaine, red onion, 2 colors peppers, tomato. Side of favorite dressing. She lays the salmon overall a small piece of parchment paper, before placing it over the salad. (I make her the baked salmon at the beginning of the week.)
