Not great, becomes mushy. But if you do freeze it, make sure to use in the next week or two, otherwise the texture will totally breakdown.

If you know that you want to freeze and will be rewarming with a sauce like Alfredo or Vodka sauce, slightly undercook (Aldente style) the noodles and they reheat well.

I would let it defrost and then use as you regularly would. If you need to use it right away I'd put it in the oven on a low temp to allow it to thaw.

I freeze macaroni all the time and it never comes out mushy. And I definitely freeze for more than 2 weeks.

I make a huge pot, put into ziploc bags for individual suppers, and microwave as necessary for 2-3 minutes.

It may be more rubbery or dry, but definitely not mushy. Sauce or ketchup covers it perfectly and saves me so much time.

Slightly off topic but I froze macaroni salad last week even though I wasn’t sure if that was a good idea.

How can I defrost it?
Could of taste normal?
