I have two boxes of matza ball mix but dh keeps bringing home matza balls from work... Anything else to do with them???

It's mostly matza meal and spices so you could probably use to bread chicken or fish.

Add some more seasoning to taste and use it as stuffing or kishka. Or kishkalach dropped into the cholent.

Peas Love and Carrots has a recipe for tomato soup with cheese matza balls. It was surprisingly really good.
