Hi all. Can anybody help me come up with ideas for a nice Melava Malka, preferably dairy, for some out-of-town relatives coming to visit. I would like it to be on the nicer side.

Basic thoughts I had would be challah rolls and/or ciabatta rolls. Some type of salmon dish, a pasta dish, one or two salads. Drinks and dessert needed too.

If anyone has any thoughts or suggestions and recipes especially please help! Thanks Smile

2 medium zucchini
About 400 grams of cherry tomatoes
1 basket of mushrooms
1 purple onion
1 pack of coriander (or parsley)
1 pack of feta cheese - 250 grams
⅓ A cup of olive oil
1 teaspoon salt
A little black pepper
½ A package of pasta that you like - 250 grams
Preparation

Preheat oven to 200 degrees on grill mode.
Cut the zucchini into semicircles, cut the cherry tomatoes, cut the purple onion into large cubes and cut the mushrooms into slices. Place all the chopped vegetables in a pot or pan suitable for the oven.
Pour the olive oil over the vegetables, add salt and pepper and mix well.
Put in the oven and roast until the vegetables are nicely browned, about 20-30 minutes, stirring occasionally.
Meanwhile chop the coriander and bring a pot with plenty of water and salt to a boil. About 10 minutes before removing the vegetables, add the pasta to the boiling water. When the pasta is ready to filter it from the water.
Remove the vegetables from the oven, add the pasta to them, add coriander and crumble over the feta cheese. Mix everything together and serve.

The menu can be,

Punch
Onion soup with grated cheese
Lasagna, salmon, 2 or 3 salads, roast potatoes, a noodle salad or hot sesame noodles.
Dessert, fruit salad, cheese cake, milky ice cream.

You can make soup especially if it’s cold where you live.
I once had the yummiest onion soup
Chop tons of onion - big dice
Put in a pot on a low flame
Mix in some salt
Cover and cook for a long time on lowest flame possible
You don’t want color just very soft and sweet onions
This step may take 1 hr or more
Stir occasionally to make sure nothing is sticking
All this can be done in advance the day before

Fill the pot with water and bring to a boil
Add consume to taste

Take 1/2 of an old challah and cut into cubes

When the soup is boiling add the cubes of challah and simmer the soup for 1/2 an hour

Are they staying with you over Shabbos
Many like a lighter menu for melava malka especially if they ate heavy Shabbos day

A good soup is always welcome, especially in the winter. French onion, broccoli cheddar, vegetable lentil, etc.
Daniella from peas love and carrots has an interesting dairy cabbage in a miso-wine- tomato broth recipe on her page that my family loved. She also recently posted a scallion pancake recipe that may be an option for you.
Maybe fresh lasagna and a side of green salad with a Greek yogurt dill dressing (plain Greek yogurt, s&p, fresh lemon, fresh dill, bit of white wine vinegar and maybe a tiny sugar to balance it).

For some reason the links aren’t pasting properly, but try searching on Kosher.com- Lite Fettucine Alfredo (by Faigy Grossman) and Creamy Dairy-Dressed salad
Both of these are delicious and are on the easier side to make (without looking it Wink)
Or you can make a baked ziti - the kind where you don’t have to cook the ziti before is super easy and delicious!
