Thinking of trying chicken cutlets in the chulent instead of chicken bottoms.
Does it dry up or is it good?

If your chulent is pretty "wet" the cutlets should be soft.

Make sure you push the cutlets below the gravy. If it on top of the gravy it will dry out.

I recently put a chicken soup on the hot plate for shabbos day and had chicken cutlets in it and the chicken was very dry. I was shocked because it's sitting in liquid soup, how could it be dry? But it was.
I would be wary to put chicken cutlets in a crockpot no matter how much liquid there is.

Chicken cutlets dry out if overcooked, no matter how much liquid we use.

I've made chicken cutlets (breaded or grilled) before Shabbos. Wrap in foil in fridge overnight, and place on top of chulent pot Shabbos morning so you have nice warm cutlets for lunch. If you aren't making chulent, consider a crock pot full of water for same purposes. Or make an overnight split pea soup or something like that instead of chulent.

Don’t waste chicken cut in cholent. It’s better to have them cold or slice them into salad. They’ll be dry and inedible.
