I did it once with sweet potatoes. peeled erev yt and stored in water in fridge in a covered bowl and then only sliced and baked on the second day. we r alive to tell the tale but I’m sure u can google the length of time tht is officially considered safe.

I've done it, but I've changed the water every day.
Make sure the potatoes are completely submerged.
