Anyone have recipes theyve tried and loved for Fluffy cakes (or amazing cookies) that are non Gebrokts, with no separating eggs and not Pesach tasting?

I have an excellent chocolate cake recipe that meets this description, but I'm at work at the moment. I'll try to remember to post when I get home. You mix the dry ingredients, add the eggs and mix it all up - I often do it with just a spoon - and put it in the oven.

IMHO you are asking for the almost impossible. There is Hinda's chocolate cake and hungarian chocolate cakes. They are heavy and dense and divine but they are not fluffy.

Any amazing un-Pesach tasting cakes that arent chocolate cakes, and any amazing non- Pesach tasting cookies.
My favorite cookie recipe for years now is Nina's Biscuits. Thanks OOTBubby.

These chocolate chip cookie squares from Between Carpools are very good.
1 cup sugar
2 ¼ cup almond flour
1 cup chocolate chips (or equivalent chopped chocolate)
½ teaspoon salt
½ teaspoon baking powder
2 eggs
½ cup oil

This one?
Moist Chocolate Cake
• 1 tsp baking soda
• 1/2 tsp lemon juice or Pesach vinegar
• 5 eggs
• 1 1/2 cups sugar
• 1 cup oil
• 1 Tbsp vanilla sugar OR 1 tsp vanilla extract
• 1/2 cup cocoa
• pinch coffee
• 3/4 cup potato starch OR tapioca starch
In a small bowl combine the baking soda and lemon juice. Set aside.
Whisk together the eggs, sugar, and oil. Add the vanilla, cocoa, coffee, potato starch and activated baking soda mixture, and mix until well combined.
Pour into a greased 9x13 pan or two 9" round pans.
Bake in oven preheated to 350 until toothpick inserted in center comes out clean, about 35-40 minutes.
Optional glaze: melt together 2 cups confectioners sugar, 1 stick margarine, 1/3 cup cocoa, 1 tsp vanilla extract and 1/8 cup water in a double boiler. Spread over cooled cake.

Also, you use a regular 9 X 12, not shallow, correct?

It delish. I use a shallow brownie pan actually. It's like an 8 x 13 instead of a 9 x 13. And it's only 2 inches high instead of 3 inches high.
Works fine in a 9x13 pan. And the fam loves it in cupcake form. You can make a confectionars sugar/cocoa glaze.
Btw the boxed Gefen marble cake is great. I never would have thought to try but dh brought it home once. Somehow the yellow no mixer cakes just aren't successful with starch.

Thanks! The quantities of the Moist cake, are too low for a regular 9 X 12?

This is a very good recipe.
I've used it during the year too when I needed a gluten free cake.
I frost it with ganache made from coconut cream and melted chocolate.
