When a recipe asks for sweet wine, do they mean dry or sweet? Can I use Rashi light,?

If it calls for sweet wine, you use sweet wine. If it calls for red wine, that would typically be somewhere from semi-sweet to dry, but any red wine is fine.

I've used Rashi light red Concord wine on roast and it came out delicious. Enjoy.

Can you tell me what else you put on it? Thanks!

For 4-5 lb roast:
2 onions
4 cloves garlic
1 cup sweet wine
Slice the onions and spread them over the bottom of the pan. Mince the garlic and put it all over the roast. (Of course if you don't use garlic on pesach, just omit.)
Pour the wine over the roast and be careful to use a large enough pan as the meat will release juices and you don't want the pan to overflow.
If you're using foil pans you can double up and use one pan inside the other as a single pan may not be strong enough.
I cover the roast with parchment paper and then with foil. Bake at 375 approximately 3 to 4 hours.
Let roast cool before slicing.
