I posted this recipe on a different thread before my house was pesachdig, but made up measurements (and said so on the thread). I'm too lazy to find the old thread and fix everything, but here is my mezonos cookie recipe. It's from a yellow yeshiva cookbook, I don't remember which since I ripped out the pesach section.
2 eggs
1 c sugar
1/2 c oil
1/2 c matzah meal
1/2 cup potato starch
pinch of salt
1 tsp vanilla
optional 1/3 c cocoa
bake 12 minutes at 375.

They're usually soft, but you can't really go by me. My family isn't very good at following recipes. Either ds makes them and decides to pour the ingredients without measuring or I end up spilling the potato starch into the batter. We have a tendency to mess up when baking.
