Mama Bears vegetable muffins should convert nicely from 3 tbsp flour to 2 tbsp potato starch. For topping use pesach crumbs or skip.

I freeze all my cakes and cookies as soon as they cool.
Most freeze well, just like chametz kugels.
Notable exception is lukshen kugel made with Pesach noodles.
The texture of the noodles is very crumbly after freezing.
I advise against it.
