Can I freeze raw challah dough, defrost on Thursday and bake on Friday?
Or better to bake and freeze today?

Either way is fine
You can also leave in the refrigerator up to 24 hours but beware it will grow

I heard you need to adjust the yeast since some will die in the freezing process
So if they don’t grow the same that’s why

Prob depends on your recipe.
But according to my mom
You can either freeze it unrisen and give it extra time to rise after defrost
Or .. braid it and freezes then just pop in oven when you want, after defrosting
