This one! It’s very sweet though, and most of my family felt it should be a dessert, not a kugel. You can leave out the sugar sprinkled over the apples, and definitely decrease the vanilla sugar to half, because otherwise it’s too strong.

I haven't yet liked any pesach apple kugels but I liked this one. Felt like I hit the jackpot! (I sprinkled cinnamon on the apples if that makes a difference).

Not sure about here, but I tend to get nice reviews for this one:
Ingredients: 6 apples, peeled and roughly chopped. A mix of granny smith and something sweeter works well.
6 eggs.
1 glug of wine, preferably a really sweet one.
cinnamon.
Preheat oven to 350 F.
1. Separate eggs.
2. Start cooking the apples, wine, and cinnamon on the stove into a sauce. (Dump it all in a pot. heat to boiling, then simmer until it's sauce)
3. While the apples cook down, beat the whites until stiff.
4. Take sauce off the stove to cool. After a few minutes, blend in the egg yokes with the sauce.
5. Gently mix (fold???) the sauce in with the stiff whites.
6. Plop into an 8x10 tin pan.
7. Bake until done. At least 30 minutes?
