I do a meal prep for the week. Usually I do it on Sunday but I was too tired so will do it tonight.
The original recipe for tonight was salmon cakes and a sauce but I am too tired lol so I am just making regular salmon, the sauce and greenbeans.
While that cooks I will make a chicken dish for tomorrow that gets turned into a different chicken for Wed dinner. I will make orzo and peas as a side dish thats super easy.
Thursday is either pasta or ordering a pizza.
The goal is to bang it out tonight and not think about food again until Thursday.

I'm with you. Even warming up and serving leftovers from yt was almost too much for me yesterday.
Today, I made rice in a pan in the oven, defrosted already marinated chicken cutlets and just baked it in the oven. Maybe pickles, cucumbers on the side.
Tomorrow night, I'm making crockpot dinner. One container of frozen sauteed onions, 2 pkg drumsticks, chunks of carrots and potatoes with salt, pepper, garlic powder.
I don't have plans yet for Wednesday or Thursday.

I wish we had leftovers. Lunch is usually salad and tuna. Dinner is baked chicken with a veg. No little children.

One day at a time. Last night leftovers, schnitzel, and sautéed some mushrooms I didn’t get around to using. Sounds like a lot but didn’t have too much leftovers and used some of it Motzei Pesach.
Tonight spinach lasagna.

I thought I'll get some ideas. I'm just so unmotivated. Tonight's supper came about because my kids drove me crazy for dairy. I made Breaded salmon and baked ziti. We don't eat salmon pesach so it wasn't boring. I have no clue what I'm doing tomorrow other than vegetable salad.

Chicken and rice in a pan is really easy. I put veggies in as well. If your kids eat it’s perfect

I did stir fry tonight using leftover chicken from Pesach.
Maybe try other foods you didn't eat on Pesach, like the salmon and ziti.
Taco bar/salad, meat or vegetarian version
Falafel, also fast, minimal cooking involved, can be parve.
Shwarma
Deli sandwiches with salad or soup
Anyone that's sick of heavy eating can eat the mains with just salad or veggies. The carb cravers get to eat chometz.
