Can you mix dough by hand or will it result in even more crumbly challah?

I make spelt rolls by hand 3 times a week and never had an issue of crumbly dough. Sometimes it's kind of stretchy gooey but never crumbly.

I always make spelt challah by hand.
Don’t over knead the dough.
Mix till it has all come together and forms a nice ball of dough and then leave it.
I find too much kneading makes the challahs more crumbly.

The recipes I see on kosher.com are for 5 lbs of flour (or less) and that asks for 3 oz yeast.
I have a 6 lb bag and 3 oz fresh yeast- recipe on bag says 3 1/2 oz yeast. Can I put 1/2 oz dry yeast or omit or will that mess things up?
