How long do I cook it for on a gas stove? Do I wait for the salmon to cook down completely before putting it in the fridge?
I usually cook fillets in an aluminum pan then pour the sauce and refrigerate after I pour the sauce over it, and usually it comes out tasting delicious, it just comes out hard and tough.
I’m looking for that melt in your mouth texture.

Salmon shouldn't be marinated for more than 20-30 minutes. It kind of hardens the fish, because its flesh is so delicate.
Bake or cook salmon just until done for soft delicious fish (about 18 min in the oven, 10 min on the stove). The longer you cook the firmer it will get.
