Split, like milchigs-- and fleishigs, which some do on YT? It's not YT yet on Shabbos.
Have a third meal, like every Shabbos? Yes, a light one.
Something else?

Do you mean in order to eat dairy? Shabbos isn't Shavuos, it is erev Shavuos.

I’ve seen that done.
It’s so you have shalosh seudos on shabbos. We’re not going to serve shalosh seudos at 8pm as we normally would, as the Yom Tov meal will be shortly after that.
So some people start the shabbos lunch meal with the first course and then bench and go for a short walk. Then wash again and have the next course. This way they had 3 seudos on shabbos.

We often split the meal in this type of situation. First course (liver/salads/etc), bentch, then DH goes to early mincha. When he comes home, we wash & have main course.
