I love making roasted vegetables. Like roasted cauliflower, or roasted sliced zucchini (green and yellow). You can do brocolli (not in my house, my DD is allergic.)

I love cauliflower but my dh is tired of it.
& I’m sooo lazy to slice up veggies to roast

Is there a recipe for garlic broccoli?

Thaw/blanch broccoli by placing in colander and pouring boiling water over it. Peel a head of garlic, slice cloves and fry in olive oil. Mix.

I often buy cut up zucchini & carrots from the store.

Here is my amazing trick for crisp veg.

Heat your oven to 475 or even more (you have to see how your oven works). Place veg on oiled parchment in REAL PAN. (Disposable will brown eventually but take way longer & not as crips).

Place on bottom rack & check after 10 minutes. Should be nice & brown on the bottoms, may need a few more minutes.

Now place on second to top rack & broil for about 10 minutes. No need to "carefully flip each piece" as the magazines so optimistically suggest!

Yes.

A very healthy starch, but definitely a starch that raises blood glucose as opposed to a veggie or proteins.

Lay out still frozen broccoli florets on a baking sheet. Spray with avocado oil spray and season generously with coarse salt. Roast at 450 for 35 minutes. Gets polished off every time.
