moroccan wife here Laugh

lots of olive oil
whole head of garlic (chopped)
then add and fry your spices: cumin, paprika, salt, pepper

meanwhile I have about 5 plum tmatoes that I peel (submerge in boiling water to peel) and chop and add to garlic mixture. If I have any soft tomatoes in my fridge I add in.

In your oven on broil add 3 or 4 peppers (red/green) and broil until they turn black and youre able to peel them. slice into strips and then add to the pan.

I add in sliced carrots, potatoes, fava beans, whole head of cilantro and some water. cook until soft. add in fish and add more cilantro on top. cover and cook for half hour on low.

I usually also make matbucha at the same time and ill add a few tablespoons of matbucha to the fish.

Moroccan wife here, as well, and ours is very different!
Layer chickpeas, sliced potato, and fish (we do salmon and/or tilapia). Sprinkle on some sliced green olives.
Add any other vegetables you'd like- we sometimes do tomato, baby corn, or carrots.
Add spices- paprika (a lot, so the fish is red), cumin, salt, pepper, soup mix (parve), and a little turmeric. Fill with water.
Tomato sauce optional.
You can do it in a tinfoil pan, or a shallow metal pot.
Cook on the stove on medium flame.

Mine is simple. But the key is fresh ingredients.

Sauté garlic, chopped mushy tomatoes and a pepper. Add 1 small chili pepper.
Fresh chopped parsley and cilantro
Lots of olive oil
Paprika pepper salt
Tomato paste

Add fish. Generously spice.

Cook on low.
Squeeze fresh lemon on top
