I don't think a person can see you have looked at their page - at least not on Facebook. Maybe on Instagram.
The Facebook algorithm may list you as a suggested friend to the person you have stalked, but that doesn't necessarily mean that you looked at his page.
Do be careful though not to accidentally like any old posts! Check your activity log after.
