What would you do with these challahs?

I brought 2 frozen homemade challahs to my mother in law for yt as backup. They stayed in the freezer and this morning someone dropped them off by my husband's chair by shacharis. He didn't notice until now when he went for mincha.

It's Wed... Should I refreeze, eat as bread, or leave defrosted until Shabbos?

Leave defrosted until shabbos and then warm on the blech. I always buy challah on Wednesday it’s totally fine

So I decided to use one challah for sandwiches on Thursday (day after defrosted) and one for Friday night, and both were totally fine. If had tasted bad we had backup in the freezer, but we didn't need it.

Why was it even a problem that it was out of the freezer for a few hours?
Often I take homemade challah out of the freezer for a shabbos meal that we don’t end up using and I’ll freeze it again after shabbos.

It was out for a full day. I was always told defrosting isn't good for it, and to defrost right before.
