As far as I understand we no longer have to take a pcr test before leaving to Israel and before coming back. No more masks on planes. Is there anything mandatory I still have to do? I heard something about filling out an online declaration. What about purchasing Covid insurance?

Correct, you still have to fill out an online declaration and print it out to show at checkin. You used to have to do it within 48 hours of travel, now I believe you can do it up to 10 days in advance. Even when they had other rules they were not strict about checking for Covid insurance, so it certainly shouldn't be an issue now.
