There was a lemon pie recipe on here
LEMON PIE
(This tastes like cheesecake!)
Defrost 1 carton of rich's whip (8 oz) or equivalent. (I just double the recipe if I'm using a 16 oz carton so I don't have to measure half.) The defrosting part does take longer than 10 minutes unfortunately.
Pour whip into mixing bowl.
Add 4 eggs, 1/2 cup sugar, and 1/4 cup lemon juice.
Mix with immersion blender until sugar is basically incorporated. (Try not to overmix because it grows in volume and will overflow your pie crust which is just annoying.)
Put graham cracker crust on baking sheet for stability. (Optionally line baking sheet with foil for easier cleanup if you're a messy cook like me.)
Pour mixture into crust. It may reach the top.
Bake for 30 minutes. It may still look uncooked in the middle, but firms up some when cool.
(Some of my kids like it frozen.)

Lemon Cake - KBD
2 1/2 cups flour
1 1/2 cups sugar
3 tsp baking powder
3/4 cup orange juice
3/4 cup oil
2 tsp lemon extract
4 eggs
Glaze
1 1/2 cup confectioners sugar
1/2 cup lemon juice
Preheat oven to 325°F.
Whisk together flour, sugar and baking powder. Add orange juice, oil, lemon extract and eggs and continue to mix until smooth.
Pour batter into a greased and floured bundt pan.
Bake for 45-50 minutes.
When done, insert a skewer every 1". Pour 1/2 the glaze over so it seeps into the holes. When cool, turn it over & pour on the remaining glaze.
(My family enjoys this better with a more basic confectioner's sugar glaze made of 1 1/2 cup confectioners sugar with just a few teaspoons of lemon juice.)

Lemon Mousse:
2 small rich's whip
1 can lemon pie filling
1.5 small jar of marshmallow fluff
Whip it all up in your mixer. Serve in mini cups or put in a shortbread pie crust or make a trifle with itn with pieces of vanilla cake and more whip cream.

Not healthy but quick and delicious can of lemon pie filling, Richs whip prepared, and part of a container of marshmallow fluff blended together and put over a graham cracker crust
Put in freezer
