Never been off dairy before during the nine days. I also don't like salmon, and the only fish dh likes is salmon lol.
Planning to do veggie burgers one night and poke bowls another (diff fish for each)
Any more ideas?

Falafel is a great idea!!
Too hot for soups, dh doesn't like soft cooked eggs so no shakshuka, no tuna patties because of the fish thing

Do you like turbo, bronzino, sole, flounder, tilapia? It's super simple to put a slice of salmon and a slice of mild white fish fillet on a pan and season the same way- not any harder than seasoning 2 slices salmon. Tastes delish! Is that an option?

This. With any starch. Rice, quinoa, potatoes. You can do this twice.
Kani salad with rice. Or is Kani considered fish for you?

So you need 3 more dinners. Hopefully you can get some ideas here.
Falafel balls, warm pitas, tehina, Israeli salad, fried eggplant, sauerkraut, french fries.
Frittata, hash browns or scalloped potatoes, broccolini.
Lemon garlic fish (some salmon and some turbo), green beans, 3 color baby red potatoes.
Shakshuka, warm crusty baguettes, Israeli salad.
Beyond beef or black beans in crunchy corn tacos, with avocado and tomato salsa. Large leafy salad or hearty veggie soup on the side.
Loaded salad niçoise (leafy greens, tomatoes, olives, red skinned potatoes, green beans, eggs, fish optional, red wine vinegar/mustard dressing).
Sushi! And avocado salad.
For the veggie burgers, add all the fixings and condiments in little bowls so each bun can be layered up and most enjoyed.
Serve yummy warm sushi rice with the poke bowls.
