I made a delicious mushroom barely soup post-fast two weeks ago, but not an exact recipe. I sauteed onions and mushrooms (fresh baby bella) for a while in a pot. I added some sliced fresh carrots, a cube of garlic, stir till fragrant, add water, salt and pepper. Bring to a boil, when boiling add about 1/2 cup barley. Simmer for at least an hour. Optional add a little fresh dill at the end.
I did this in a 6 quart pot. I used 2 medium onions, a carton of mushrooms, 2 carrots. Water was like 2/3 up the way (it's a deep pot, and I like using it cuz it doesn't boil over and make a mess.)
