I rushed in from work and made salmon fillet, fresh fish patties, mac and cheese and brocolli quiche. And then the kids who were supposed to be eating here for the next 3 nights announced they're not. Banging head

We have dairy allergies so I'm doing basically parve options all week...

We had very easy, yet yummy baked salmon on a bed of baby spinach. For a side I heated up frozen potato knishes that my local grocery had on sale.

Tonight I'm probably going to do either salad and falafel or scrambled eggs kind of supper.

Tomorrow sushi or poke bowls.

Wednesday probably beyond burgers with maybe a small salad/roasted veggies on the side. I saw that Bingo has it on sale- not extremely cheap, but still decent for when there are limited options. We tried them once in the 9 days a different year and everyone liked it.

Thursday not sure yet. Maybe some other kind of fish. Or I'll get some inspiration from this thread.

Menu for the week I have a bunch of food restrictions unfortunately. I'm gluten free, lactose intolerant, and I can't eat salmon, eggplant, or too many eggs either.

Sunday- kids had noodle soup and I ate cornmeal coated fried sardines and baked red potato

Monday -gluten free lasagna, sauteed swiss chard with shiitake mushrooms

Tues- sushi bowls with cucumber, avocado, scallions, and seared tuna cubes.

Wed.- tuna wraps, roasted chickpeas, roasted zucchini, popcorn cauliflower

Tomorrow will probably be toasted corn tortilla tacos with black bean crumble ( peas love n carrots) feta cheese, Israeli salad.

I'm kind of enjoying this challenge of coming up with interesting and delicious dairy and parve meals. Maybe I'll start doing more of these during the rest of the year
