I saw a recipe where you blend it and make it into a kugel.

Pour frozen vegetables and 2-3 crushed garlic cloves into a skillet over medium-high heat. Add oil and stir.
Cook, uncovered 7 minutes, until heated through, stirring occasionally. Season with salt to taste and mix well. Serve fresh.
