Looking for an egg free challah recipe you love - preferably whole wheat. Open to water challah, subbing in flax or applesauce or something for eggs...any ideas that work with whole wheat!

3 cups warm water
2 cups seltzer
4 tbsp dry yeast
1 1/4 cups sugar (I do less)
1/2 cup honey (optional)
1 1/4 cups oil
1 1/2 tbsp salt
5 lbs flour (I use white whole wheat flour, it's still whole grain, but it a lighter texture)

Place 1 cup warm water, yeast yeast 2 tbsp sugar in bowl of electric mixer.

Let it sit for 7 mins until bubbly.

Add the rest of water, seltzer, oil, honey, sugar and salt. Mix a little.

Slowly add 5 flour, 1 cup or so, a time. Continue mixing on low while adding flour.

Mix on high for 8-10 mins.

Place dough in large greased bowl. Allow to rise for 1 hour.

Take challa with bracha, braid dough, let rise for at least another hour.

Bake in a preheated oven on 350 for 45 mins.

This is a great recipe. I make it in rolls at exactly 20 minutes each tray.
I put the flour and salt in a big bowl, mix the rest in my mixer, then add the rest to the flour and knead. Don't use white whole wheat. You can get away with 2/3 of the honey.

5 lbs whole wheat flour
6 packages of yeast
1 teaspoon sugar
4 teaspoons salt
2 cups oil
1.5 cups honey
6 cups lukewarm water

Proof yeast with 1 tsp sugar and 1 cup of the warm water in a small bowl.
In a small pot, slowly warm up the oil and honey on the stovetop on low flame (do not boil).
Mix dry ingredients in the mixer, slowly add the warmed oil and honey a small amount at a time, and then proofed yeast.
Next add the rest of the warm water a cup at a time. Let the mixer go for about 8 minutes.
Turn dough out into a lightly greased bowl and cover with parchment and a towel to let rise for about an hour (do not allow to rise again).
Punch down, take challah with brocha, then shape. I like to put some rolled oats on top as a garnish.
Bake at 350. Check after about 20 minutes (could take up to 40 mins for larger challahs). Make sure to rotate trays so they bake evenly. Best a bit undercooked, but golden on the outside.

Absolutely delicious!

Heavenly Whole Wheat Challah

18 ¾ cups (5 lb) whole wheat flour

6 cups very warm water

3 Tbsp dry yeast

1 1/8 cup sugar

1 1/8 cup oil

3 ½ Tbsp salt

A little oil or oil spray for greasing



Pour warm water into large mixing bowl. Add yeast, all the sugar, and 6 cups flour. Mix and then let sit for 10 minutes, until yeast bubbles. Add oil, salt, and 6 more cups flour. Mix well. Add final 6 ¾ cup flour and kneed into dough. If the dough is still sticky, add a little more flour.



Reminder:

Do the mitzvah of “hafrashas challah” at this point.



You can braid the challah right away. There is no rising necessary now. Line half pans with greased parchment papers. Brush or spray a little oil on challos. Cover loaves with a damp towel and let rise 30 minutes. Bake at ˚375 for 35-40 minutes.
