What do you pack when you are sending your son to EY to a yeshiva?

Does anyone have a list?

Pillows and blankets should be bought there. Also many American products are sold there, so don't waste your luggage pounds on shampoos or soaps. Sefarim should be bought in EY too.
Clothing is as if you're packing for camp. Perhaps a bit more.
If he is on specific foods or vitamins, send that. If not, everything can be bought in EY. Also rather pay for a second (or third) suitcase, than be overweight, they charge exorbitant fees for overweight luggage. Good luck.

Which part of Israel? Some areas have a more significant winter season than others.

If they are aimed at chutzniks coming for a year or two, the yeshiva can probably give you a list of recommended items.

Totally agree that they can get toothpaste, mouthwash, soap, etc. there, but I still send my boys with trial sizes of those so that they have for the first day or two until they get familiar with their surroundings and can get to a store. I know that when I get off the plane the first thing I want to do is take a shower.
