People with thyroid hashimotos cannot process it properly and it can keep them (me) back from losing weight

For me artificial sweeteners don't cause weight gain or inhibit loss. I have lost (and regained) hundreds of pounds while using sweeteners. I am now maintaining a 90 lb weight loss for 17 years and I use artificial sweeteners.

(I have hashimotos)

I know this is a big machlokes in the health/dieting world.
I am at the point where I feel I have nothing to lose by trying to go off all artificial sweetener, except maybe the loss of a bit of pleasure when I drink a coffee.

Not in my case either.
I'm maintaining a 70 lb loss for 18 years and I consume lots of artificial sweeteners.
If I took in all the hundreds of calories from the sugar-sweetened versions of what I consume I'd be a balloon.
