It's not the number of family members has anyone heard of it? A Rebbe told us the hider mitzvah is using olive oil and to light 7 ...

I know someone who does this and she said that the seven candles are equal to the number of people who are called up to the Torah on Shabbos morning. In yomtov she lights 5 candles because there are only 5 aliyos then.

I use olive oil, but haven't heard a real source for lighting more than two candles.
