My bosch broke today and I want to make challah. I once made my dough by hand and it didn't go so well, so I thought maybe I need a different recipe when I do it by hand. Does anyone have a recipe for good challah that they make by hand?
Preferably a basic recipe without too many steps.

I've been making this by hand for 20 years.
I usually 1 1/2 times it and still make by hand, and then you can take challah with a bracha.


1. In a small bowl, dissolve in ½ C warm water
3 T rapid rise yeast
2 ½ T sugar
Set aside until it doubles. (10 min?)

2. In a large bowl, combine the following:

3 egg whites [save yolks for egg wash]
½ C (less) canola oil
¾ C Splenda/Sugar or 1/2 c Agave nectar
4 C flour [I usually use half spelt and half WW but you can do whatever you like]
1 C lukewarm water

3. Add yeast mixture. Mix gently.

4. Add
4 C flour (mixture of WW and white)
1 C (little less) lukewarm water

5. Knead. Add more flour if necessary. Let rise 1.5 hrs. Punch down. (If you have time, let it rise again and punch down again)
6. Take challah without a bracha.
7. Shape or braid. Brush with egg wash [egg mixed with a bit of water] sprinkled with cinnamon. Bake at 375 for 40 min. (Check after 20 min - ovens may vary)

I've never owned a mixer, I make all my challahs by hand. Maybe it would come out better if I had a Bosch, but I guess I don't have what to compare it to!

Rebbetzin kanievsky recipe is by hand.
My sister makes it all the time.
Sorry I dont have it but maybe someone can post. Its in the book.

I make a water challah recipe by hand.
Its v good.

Could I have the water challah recipe? My husband is begging me to make it and I can't find a decent recipe to make by hand.

Dissolve 2 tbsp yeast in 1 c warm water, with a bit of sugar.
Mix 1 tbsp salt into 1.5 kiloFlour .

Add 1 disposable c. Sugar and
3/4 disposable c oil.
Add the yeast mixture.

Then Add 2 c warm water.

Came back to say that I went with this recipe and everyone loved it, thanks essie14! Thought it would be easiest to mix as it has several steps so I'm not mixing all the flour in one shot. Forgot to separate the eggs but it tasted great regardless.
