TIME SENSITIVE Sautéed onions- freeze question

How far do I sautée them?
Until they are really carmelized and then freeze
Or
Light beige-ish freeze and then finish Carmelizing when I will use it
Will it caramelize after it’s frozen

I do it all the way. Then freeze in zip loc bags or whatever works for you

I do it all the way (in the oven) and then freeze in half pound containers.

If I do - do it partial way (I need to leave)
Can I freeze and finish sautéing after it defrost
Or will it not be good

I'd rather do it on a high flame and for a shorter amount of time than doing it halfway.
If it's 2-3 onions then it can be thoroughly cooked within 15-20 minutes on a high flame.

Uncooked onions can become sour.
