I make moroccan carrots - mix garlic, honey, olive oil, lemon juice and cumin - toss and roast. If you want the details, I can edit the post with the exact recipe

But my ashki recipe isn't that different.
No oil because we don't like our vegetables greasy. No cumin, no garlic, no lemon juice because our flavor profiles rosh hashana are sweet and sweeter, not sour or spicy.
Thin slices or matchsticks. Orange or pineapple juice to cover the bottom of the pot, not to cover the carrots. Honey and brown sugar. Pinch of salt. Cinnamon stick. Simmer gently for a long time.

We eat them raw, together with the other simanim. No fans of cooked carrots or salad-dressed carrots here.
