If I want to make dough and then bake the next day…
Do I refrigerate it after it rises? Before it rises? After it is shaped?

When I am ready to bake it so I need to let it get to room temperature and then rise again?

Make the dough and refrigerate it immediately. It will have its first rise in the fridge. Next day shape and let rise until room temp. Bake.
If you rise it first, it will rise too many times and the texture will not be right.
