Some local fancy shops actually sell their cakes frozen, as they hold their shape better that way.
I'm thinking strawberry shortcake.....

Most bakeries bake and freeze their cakes before they are assembled/frosted (And sometimes after too)

Most cakes and miniatures we buy for simcha's, are coming from the freezer.
If it's thawed and doesn't taste freezer burnt, why not?

Ugh I didnt want to find that out.
I feel its a bit of a letdown..
If I buy from a bakery I really do want it fresh.

It might be 1-3 days old when it was baked and frozen after cooling. It actually keeps it more fresh than refrigerating it or keeping it on the shelf and gives them time to frost to order, etc. Also, baking is a long lead activity, so if they expect to need to sell a LOT in a couple days, they may start baking earlier in the week, freeze, and then frost closer to sale. If it's a busy bakery and a busy time of year, then it's probably not that old.
