I was going through a new cookbook and thought of this thread - all that changes is the spice mixture for the drum sticks

Just use plant based butter or even olive oil where the recipe specifies butter of course

baked chicken drumsticks
(four ways)

Excerpt From: Rachel Farnsworth - The Stay At Home Chef Family Favorites Cookbook

READY IN 40 MINUTES • MAKES 5 SERVINGS

CLASSIC SEASONED DRUMSTICKS:

10 chicken drumsticks
5 tbsp butter
2 tsp paprika
2 tsp granulated sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
1 tsp black pepper

CAJUN-SPICED DRUMSTICKS:

10 chicken drumsticks
5 tbsp butter
1 tsp paprika
½ tsp salt
½ tsp onion powder
½ tsp garlic powder
½ tsp dried oregano
½ tsp dried basil
¼ tsp dried thyme
¼ tsp black pepper
¼ tsp white pepper
¼ tsp cayenne pepper

ZESTY TEX-MEX DRUMSTICKS:

10 chicken drumsticks
5 tbsp butter
Juice of 2 limes (about ¼ cup), drizzled over the drumsticks prior to coating with the rub
2 tsp ground cumin
1 tsp chili powder
½ tsp cayenne
½ tsp garlic powder
⅛ tsp ground cloves
½ tsp salt

FLAVORS OF INDIA DRUMSTICKS:

10 chicken drumsticks
5 tbsp butter
Juice of 1 large lemon (about ¼ cup), drizzled over the drumsticks prior to coating with the rub
2 tsp ground cumin
2 tsp paprika
1 tsp salt
1 tsp garlic powder
1 tsp ground ginger
1 tsp garam masala
¼ tsp cayenne

These baked chicken drumsticks are so easy to make and feature juicy meat and crispy skin. I’ve perfected four flavor options to ensure there’s something to please everyone. And at only 45 minutes or less from prep to dinner time, this recipe is both kid- and adult-approved!

1  Preheat the oven to 400°F (204°C). Lightly coat a large baking sheet with nonstick cooking spray.

2  Place the drumsticks in a single layer on the prepared baking sheet.

3  Combine the dry rub ingredients in a small mixing bowl. Sprinkle the rub in an even layer over all sides of the drumsticks. (If desired, apply the rub both on and underneath the skin.)

4  Place ½ tablespoon of butter on the top of the meatiest part of each drumstick. (The butter will melt over the meat and skin, keeping the meat juicy and making the skin crispy.)

5  Bake for 25 to 30 minutes or until the internal temperature reaches 165°F (74°C) on a meat thermometer. (Actual cooking time will depend on the size of the drumsticks.)

honestly not much can compete. you can make barley, farro or freekah. sounds like you need less food at each meal. maybe just do soup and a special dessert and call it a day for some of the meals. you can do hummus bassar and israeli salad for one meal or a yemenite beef soup etc
