For Seuda before the fast - Soup with Krepalach, Grilled chicken breast, mashed potatoes, carrot muffins, and string beans. Watermelon for dessert.

We keep it simple and filling.

ETA left out the Challah and dips.

First seuda:
challah
eggplant with techina
matbucha/ chumus/ whatever else we have
tuna salad
egg salad
cut up veggies

Seudat hamafseket:
challah
gefilte fish
peas and carrots (not sure how I'll cook them yet)
spaghetti with meatsauce
honey cake

Every year I mean to make kreplach and then end up not doing it because I don't know how (yeah my mother made sure not to teach me, not sure why) and I only remember the night before or in the morning, and by then I've missed the boat because it's time consuming and especially if you have no idea what you're doing it's not a last-minute task. This year we live somewhere where I might be able to buy ready-made, so we'll see.

Just buy a package of chopped meat. Mix it with your favorite spices (like for meatballs. I do a tablespoon each of sesame oil and teriyaki sauce to a package of chopped meat as we like an Asian twist.)

Get a package of wonton wrappers. I like the square ones. Make tiny meatballs and put them in the wonton wrappers. Bring the edges together and pinch them closed. I like to wet the wonton wrappers with a little water - it makes them sticky and they close nicely that way.

You can either drop these in boiling salted water to cook (put a little oil in the water so they don't stick) or steam them (I do this - I have a steamer that sits on the pot - I boil up salted water, and I put the kreplach in the steamer and they get steamed. I spray the steamer with oil spray and even the kreplach themselves, so they don't stick to each other.)

It's really not that difficult. I make a ton of kreplach and freeze them raw, and take out what I need (Erev YK, Hoshana Rabbah, etc...) and cook them up.

Hatzlacha!

I think this year a little different for us because we don’t have anyone staying with us for yk and most of my kids will be fasting.

First meal only my husband eats- I’ll give him challah, Gefilte fish and probably deli and Lukshen kugel…
Kids will probably want bagels

2nd meal-
Challah
Chicken soup with noodles and knaidlach
Baked schnitzel
Rice
Potato kugel
Lukshen kugel
Steamed green beans

It’s lots of starchy sides but not everyone likes everything so…

The custom is to have two meals. One around midday and one after mincha called seudas hamafsekes.
Eating erev yk is considered a mitzvah.
Many do not eat fish at the second meal.
Kreplach is served
There’s a minhag not to eat nuts
It’s a proper meal with challah (many dip in honey). Not lechem mishna
There’s a Minhag to ask for lekach, honey cake.
Find out what your personal family/community minhagim are.
Wishing you all an easy and Meaningful fast.

Does the first meal have to be fleishig? We will definitely have fleishig for seudas hamafsekes, but if my family prefers milchig for the first meal, is that a problem? I see everyone else's menus are fleishig, so I'm wondering if perhaps there's an inyan for both meals to be fleishig?

Yes, it’s supposed to be like a Yom Tov seuda. That meal is as big a mitzvah as fasting on YK.

Obvs you need to ask your on question. But I asked this (Lkwd rabbi for reference!) and its fine not to serve fleishig the first meal. I'm making frittata. Thats the only one I asked about. I'm serving fleishig the second meal so didn't reference it.

Lunch will be eggs and bread. A pretty standard lunch, but will make "kugel omelette"- saute leftover potato kugel from Shabbat in a non-stick, pour eggs over it, and make omelette/scrambled eggs. Delicious and very filling.

Main seudah will be schnitzel with either rice or potatoes. And challah. Maybe a cabbage salad, as well. I like to fill up on protein and carbs, instead of soup or vegetables. I find I fast much better like that.

Fruit and snacks will be eaten throughout the day.
