Ground Chicken - how bad would it be

A family member can no longer eat beef for health reasons. I am thinking to substitute all my regular ground beef recipes with ground chicken. Does anyone know how it would taste?

Meatballs
Burgers
Meat Lasagna
Stuffed cabbage
Meat sauce

Anything saucy should be fine. I also like the dark chicken vs the white. You just need moisture that you don't always need with beef.

Are they able to have dark ground chicken and dark ground turkey? Those are delicious and moist (I particularly like dark ground turkey- reminds me of veal).

Please look at what you buy and it’s nutrition facts. Often ground chicken has skin and added fat to help with the consistency. It may or may not be a healthier option then very lean ground beef.

This is correct as in general commercially ground chicken is high in fat and other questionable parts.

If you grind it at home or purchase ground white meat chicken from a reputable source it would be healthier in terms of being lower in fat. For example, often white meat ground turkey is almost 0% fat and is so lacking fat that you have to add ingredients or else it is too dry when cooked as a burger or meatball.

There are cuts of beef which are very low in fat if that is the issue.

And how you cook any ingredient in general is going to have more impact on the nutritional value and healthiness than whether it is chicken or lean beef.

You can definitely make all of those with ground chicken.

I do dark ground chicken with eggs, spices, drop of crumbs and shredded squash. I like it better than bergers. I serve it without a bun.

It’s good. I’ve done it many times. Just put in extra spices/sauce because it’s a little more bland than beef
