We call it za'atar chicken and potatoes
Cube potatoes and chicken cutlets (I do them both pretty small), mix in a 9x13 with salt, pepper, za'atar, thyme, and olive oil.
Put in oven on 350, covered.
So easy and always comes out super delicious!

I don’t know if you have these ingredients
Zucchini cut in big piece
Onion cut in big chunks
Garlic whole cloves 10-20
Butternut squash or sweet potato cut in chunks
Bone in chicken
Oil
Paprika
Salt
Pepper
Garlic powder
Onion powder
Cumin
Any other spices you like
Place chicken and veggies in a large pyrex
Mix oil with spices until you have a thin sauce
Pour over everything and mix well to make sure everything is well coated
Foil
Bake 325 for 1.5 hrs
Uncover
Bake another 30 minutes
————————————
Easy pesto chicken
10-12 frozen herb cubes anything you have
1 TBSP finely chopped garlic
Salt
Oil to cover
Put everything in a container until cubes are defrosted. Give a good mix.
Pour pesto in a zip lock bag
Add thin chicken cutlet
Make sure chicken is coated with the pesto
Let marinate over night
Pour the whole thing in a pyrex and bake
350 after 30 -40 minutes check if it’s done
You can also make on the stove top

This is really good

If you have add capers and 2 TBSP of the caper juice to the liquid. It adds a special something.

We all love this: smear a mix of mayo and bbq sauce (or ketchup) with spices on chicken, roll in corn flake crumbs (if you don’t have, then spiced bread crumbs), spray with Pam and bake.

Make a mixture of a little oil, mix with salt, pepper, garlic powder & paprika. Dip and coat chicken bottom into mixture both sides. Bake on 400. First you can cover it and then uncover. Bake for like at least 2 hours. It becomes like a spicy broiled chicken bottom. The rub forming sort of a crust.

My simplest chicken- put any vegetables you have on the bottom of the pan- potatoes, sweet potatoes, carrots, peppers, mushrooms, onions…
Put chicken on top and spice with garlic powder, onion powder, and paprika.
Cover and bake 2 hours.
Eta- this is for chicken on the bone

Does mustard here mean yellow mustard or mustard powder? I never know what they mean in recipes.

Yellow mustard. It would say ground mustard if they meant powder.

Hot sauce chicken -
drizzle hot sauce (I use Frank's) over chicken (about 1 tsp per piece) and bake uncovered at 375 for 75 minutes. Baste a few times during cooking process.
The hot sauce mellows somewhat in the cooking process, it's spicy but not too spicy.

Doing meat today but simplest one pan chicken is 1 cup rice, 1.75 cups water, 3 quarters of chicken, in covered foil pan, with salt and onion soup mix, baked 2 hours on 350. You can add more (and frozen veg) as you like. Always yum.

I made a more interesting version of chicken and rice in the crockpot. I used two bell peppers, fire roasted tomatoes, short grain brown rice. I took the prep and rally recipe for tomorrow and adapted it for the crockpot.
