Firstly my kids like anything with chocolate chips - so I just add that to zucchini muffins. But I also use only whole wheat, you can use ww pastry or white whole wheat. You can add a little flax or oat bran and won't change the taste much. I usually put between 1/4 cup sugar (for my family) and 1/2 cup (for others) sugar for pretty much any muffin recipe.
We are used to olive oil, so that's what I use for us, but I know not everyone likes it in baking.
Lastly, I love zuke blueberry muffins, but my kids don't like cooked blueberries - so I barely make them.

I make a Carrot Cake-Apple Breakfast Cookie if you want to change your "veggie" It is a bit healthier than most muffins since it uses oats and flaxseed meal. It can even be vegan OR be eaten by someone with an egg allergy if necessary but I just use an egg instead of a flax egg.

3 cups grated squash
2/3 cup oil
1 cup honey
2 Tbl apple sauce
2 eggs
2 tsp vanilla extract
2 tsp baking soda
2 cups spelt flour
2 tsp cinnamon
Mix, put into muffin pans
Bake 350⁰ 40 minutes
