Keeping food warm in crockpot question

I make a certain chicken recipe in the oven but can never serve it for Shabbos lunch because it's made with a saucy glaze. If I put the already cooked chicken in a crockpot on a warm setting before Shabbos would it dry out by Shabbos day?Has anyone here ever done this before?

It would have to have a lot of liquid in it for it not to dry out

It dries out and becomes very brown too cooked.

My mom has a very small crockpot she will sometimes use to heat a sauce for corned beef or roast for Shabbos lunch. She serves the meat sliced cold or room temperature and puts the sauce in a gravy boat for people to add if they like. The trick is to make the sauce liquidy to begin with so it thickens as it cooks overnight and doesn't burn.
