I make bread crumb chicken without mayo.
I dip the chicken in egg, then the breadcrumbs. Thats it.

I often use egg and duck sauce. I'm not a huge fan of mayo. Kelloggs has a recipe called double coated chicken that uses a batter before dipping in cornflakes. I think its on the cereal box or used to be so probably easy to find online. That's really good too.

Marinate in below:
3 tablespoons honey
2 cloves garlic
1/2 teaspoon paprika
1 teaspoon mustard
2 tablespoons oil
1 egg
Dip in cornflake crumbs. Cover and bake for 2 hours.

I make it all the time and never use mayo or egg or dressing or any other kind of dip. I used to dip it in egg and then realized it made no difference at all. I add some onion soup mix in the cornflake crumbs to add extra flavor. I dampen the chicken and the flakes stay on very well. I DO melt some margarine and drizzle over the top because I like the way it changes the texture of the crumbs, but its not a coating like egg or mayo would be, just a small drizzle.

CORNFLAKE CHICKEN NUGGETS WITH SWEET POTATO CHIPS & ROASTED CHERRY TOMATOES

SERVES 4
One of my children has a friend who really prefers classic children’s foods to a range of adult flavours so when she comes round I tend to modify our recipes a little. These nuggets were, according to her, ‘the best nuggets I have ever tasted’. I am taking that as a compliment!
2 medium sweet potatoes, peeled and sliced into 1-cm/½-in. thick chips/fries
1 teaspoon olive oil
¾ teaspoon sea salt
120 g/5 cups cornflakes
1 egg
125 ml/½ cup dairy or non-dairy milk
1 tablespoon arrowroot powder
¼ teaspoon garlic salt
4 skinless, boneless chicken breasts, chopped into 4 x 2-cm/1½ x ¾-in. nuggets
16 cherry tomatoes on the vine
Preheat the oven to 200˚C (400˚F) Gas 6.
Put the sweet potatoes on a sheet pan with sides, drizzle over the olive oil and sprinkle over ½ teaspoon salt. Bake in the preheated oven for 35 minutes.
Meanwhile, grind the cornflakes in a food processor to fine crumbs. Alternatively, put the cornflakes in a freezer bag, close the bag tightly and bash the cornflakes with a rolling pin. Place in a bowl.
In another small bowl, whisk the egg, add the milk, arrowroot, garlic salt and ¼ teaspoon salt.
Dip the chicken nuggets into the egg mixture, then into the cornflakes to cover and put onto a separate sheet pan. Put the chicken nuggets in the oven with the potatoes for the last 10 minutes of baking. Add the tomatoes to the sweet potato sheet pan for the last 10 minutes. Serve immediately.
