How long do I cook a pastrami roast and in what temperature?
I bought it in KRM. Will it be too salty if I leave it in the original bag or should I rinse it and put it in a ziploc before sous vide.

A navel pastrami (in a vacuum packed bag) or a pastrami roast that has a crusty outside?
Navel: leave in bag. Put in pan filled like 1/3 with water. Bake on 225 for at least 6 hours or overnight.
Roast- personally, I & the kids found it too spicy without washing. I rinsed off some of the crust & then baked on 300 in a pan filled 1/3 with water, covered. Depending on the weight, 1.5- 2.5 hours (similar to oven corned beef method)
