I always take off the skin it makes the soup gritty and gross with the skin

Of course you can. Even skinless chicken has a bit of fat and who in the world wants greasy fatty chicken broth.
Most people skim the chicken broth to get rid of the fat and scum.

I precook my skinless chicken to remove any fat before putting it in the soup.
The soup is delicious and perfectly clear.

I take the skin off but I use bone - in chicken. Saves me from skimming. I wouldn't use boneless because you lose flavor.

Yes bone provides collagen which gives the soup flavor and texture.
People make delicious soup from the carcass of poultry but don't use the skin. Some people freeze bones if they buy bone in breasts and debone at home for example.
