I have 3 boys sharing one room and 2 girls sharing another room. They each have a closet and a big dresser with 3 large drawers and 3 smaller drawers. Shabbos clothing and off season clothes are in the closet. Weekday clothes are folded in bins in the drawers. Until now, this system worked for us.

However, as my older boys are getting bigger, their clothes are getting bigger, the drawers are very stuffed and can't stay neat or even close well. How can I reorganize? Please don't tell me to hang everything because then I'll just have an overstuffed closet, plus I'm short and a bit clumsy and find the act of hanging a real challenge.

How about putting the off season clothes in the bin and hanging the weekday clothes with the shabbos clothes in the closet.

Thanks. As I mentioned in my post I find the act of hanging challenging and not something I want to be doing daily. Plus I don't have space for bins

can you get them another dresser or put baskets on top of the dresser or shelves into the closet?

If your closet has a single high rod, can you get a second rod a little lower down.

This will make it easier to hang their clothing (you don't have to stretch to reach it), and will also double your hanging space.

Something like this

What about some shelves in your hanging space? It will increase your space for clothes if you're not making full use of your hanging space. Something like this.
