My crockpot just broke and I transferred my cholent to a pot.
I want to keep it on the hot plate over shabbos but I'm scared it's going to burn.
How much extra water should I leave to make sure it doesn't?
Am I better off using a blech on the stove?

I always put on chulent a few hrs before Shabbat with water that just covers everything. I put it on higher till it boils, then simmer for a few hrs and then move to the platte before shabbat and it should be fine.

I think it depends on how hot your platta gets. I would not leave a cholent overnight on mine, but would use the blech, to be safe. I don't worry about the top of the cholent, it's the burning on the bottom that would worry me.

so... how do I know?
When I have put the cholent on the blech in the past, it was just barely hot when we ate it.

In that case I would say the way I said is good.

I'm just scared to take the risk, so I might do the blech anyway.
We're having 4 yeshiva bachurim tomorrow and cholent is the main dish.

Tamiri, do you put it directly over the flame or not?

I don't think I have ever made cholent on the blech. Or call someone in America who does it that way. I make it in the crock pot or, in the winter when I don't mind the heat - in the oven (the yummiest). Ask one of your neighbors what they do, not all Israelis have a crock pot.
