¼ c. orange juice
⅓ c. margarine
1 c. sugar
2 c. flour
1 t. Vanilla
2 t. Baking powder
Cream together sugar and margarine. Add the remaining ingredients. Refrigerate 1 hour. Preheat oven to 375°. Shape into Hamantashen or cut out cookies and bake 15-17 minutes. Yields 45 Hamantashen.

You can generally replace one or 2 eggs with 3 tbsp soy milk per egg

This is a recipe for rugelach, you can use for cookies. Really easy to make and comes out delicious. Instead of rolling it out to make rugelach, use cookie cutters or just form small balls.
